Invite your friends.

I have always wanted to make a homemade pot pie, but was a bit intimidated.

Enter my home girl, Ina Garten's recipe.

The recipe got rave reviews. I love reading the reviews to see what others thought/substituted, and if they give any pointers. Many of the reviews laughed at others saying they "cheated" and used store bought pastry, and that the one given in the recipe was easy to follow, and delicious.

Dough/crust. etc. is always what intimidates me, but who wants to be laughed at? Plus, I love a good challenge.

I followed the recipe exactly, with the exception of the pearl onions--these things just creep me out. Back in my bartending days, if someone ordered a martini and requested these little devils, my gag reflex would trigger instantly. Nasty. Anyhoo----I didn't have those adorable individual serving bowls (on the wish list now), so I made one giant pie using a 9x13 dish. Giant is an understatement. We have enough pot pie in the freezer for the rest of the winter. Okay, not really, but this thing made serious leftovers--which is great, because it was superb. And that crust? Insanity.

Try it, you'll like it.

This needs to be on my menu next week. Ina can do now wrong. Except for her white/black/denim button down shirts. She can food style the hell out of a plate of cheese and olives but styling herself is not her thang. And I totally had the 3 BFF necklace with my two besties in elementary school. The funny thing is that we never wore them b/c we got in a fight over who was going to have to wear the middle section. Let's not let that happen.

Techinically since we are now officially BFF's I feel like you should ship me a vat if this. Looks amazing. Homemade pie crust/dough intimidates me too, have yet to tackle that beast. But perhaps I should. I have been eyeing her lobster pot pie for a while now. If its good enough for Jeffery, its good enough for me!
